कृषि उप निदेशक (फल संरक्षण) असम का कार्यालय स्थानीय रूप से उपलब्ध मौसमी फलों और सब्जियों से जैम, जेली, अचार, स्क्वैश, सॉस, चटनी आदि जैसी विभिन्न संरक्षित वस्तुओं को तैयार करने की तकनीकों के बारे में लोगों को विशेष रूप से महिला वर्ग को प्रसारित करने के उद्देश्य से फल संरक्षण में सामुदायिक कैनिंग और प्रशिक्षण योजना के तहत चलता है। इस उद्देश्य के लिए प्रशिक्षण दोनों क्षेत्रीय स्तरों पर और केंद्रों में ही केंद्रों में कर्मचारियों द्वारा सक्रिय मार्गदर्शन के साथ आयोजित किया जाता है। वर्तमान में 19 (उन्नीस) जिलों में 21 (21) सामुदायिक कैनिंग और प्रशिक्षण केंद्र हैं (दीफू केंद्र जिला परिषद के नियंत्रण में है)। इनमें से प्रत्येक केंद्र का नेतृत्व उप-मंडल कृषि अधिकारी (एस. डी. ए. ओ.) के पद पर एक अधिकारी करता है। स्थापना के बाद से इन सामुदायिक कैनिंग और प्रशिक्षण केंद्रों ने जनता के बीच काफी लोकप्रियता हासिल की है, जिन्हें अपने-अपने क्षेत्रों में फलों और सब्जियों के संरक्षण का लाभ मिला है। विभिन्न संरक्षित वस्तुओं की तैयारी के लिए सुविधाओं को आगे बढ़ाने के अलावा इन केंद्रों द्वारा प्रशिक्षण कार्यक्रम भी आयोजित किए जाते हैं और विभिन्न महिला समूह, संगठन और एन. जी. ओ. को केंद्रों के ऐसे कार्यों से बहुत लाभ हुआ है। इन केंद्रों की गतिविधियों से कुछ राजस्व भी अर्जित होता है और जो समय-समय पर सरकारी खाते में जमा किया जाता है।
1. फलों और सब्जियों के संरक्षण के लिए राज्य भर में जनता, विशेष रूप से महिलाओं और गृहिणियों को सुविधाएं प्रदान करना। 1. कम अवधि में उपभोग के लिए विशेषज्ञ तकनीकी पर्यवेक्षण और मार्गदर्शन के तहत मौसमी फलों और सब्जियों का घरेलू स्तर पर संरक्षण और डिब्बाबंदी। 1. नाममात्र शुल्क पर जैम, जेली, स्क्वैश, जूस, सॉस, चटनी, अचार आदि मूल्य वर्धित उत्पादों की तैयारी को प्रोत्साहित करना। 1. महिला समिति, एसएचजी, कॉलेज गर्ल्स आदि जैसे विभिन्न संगठनों के माध्यम से महिलाओं, गृहिणियों को विशेष रूप से ग्रामीण क्षेत्रों में 1 दिन, 3 दिन और 6 दिन के लिए फलों और सब्जियों के घरेलू स्तर पर संरक्षण का प्रशिक्षण देना (डेयरी प्रसंस्करण 1 दिन के प्रशिक्षण के तहत आता है)। 1. स्व-रोजगार के लिए फलों और सब्जियों में छोटे पैमाने पर कुटीर उद्योग शुरू करने के लिए व्यक्तियों को प्रशिक्षित करना। इन प्रशिक्षण की अवधि 7 से 15 दिनों की होगी। 1. प्रशिक्षित व्यक्तियों को प्रमाण पत्र प्रदान करना ताकि वे अपना उद्यम शुरू कर सकें
